Homemade Keto Coffee Liquer

Keto Kahlua

Eating Keto does not mean you have to say goodbye to your favorite cocktails. Homemade coffee liquer is fun and easy to make, and this recipe is no exception. Just like Kahlua, this Keto Coffee Liquer will make delicious Keto cocktails and mixed drinks. An easy variation will also make a yummy coffee syrup by simply ommiting the vodka. Besides using it yourself, this homemade liquer also makes a great gift.

The Process

This recipe is really very easy. Combine all the ingredients except the vodka, vanilla, and sweetener drops in a sauce pan and heat it to dissolve the sweetener. Make sure that the coffee is brewed strong and with quality beans; this is no time for Folgers! My favorite Keto-friendly granulated sweeteners are Lankato Monkfruit Sweetener and Swerve. Either should work for this recipe; I personally used the Monkfruit Sweetener.

Note: both of these granulated sweeteners contain erythritol. It behaves a little differently from sugar. Liquids become more easily saturated with erythritol than with sugar. This means that you cannot simply use them as a 1-to1 replacement for sugar since the erythritol will crystalize at the bottom of the container once the liqueur reaches room temperature. To avoid this, I will be using Stevia or Monk Fruit drops to supplement the sweetness of the granulated sweetener. Additionally, to more closely mimic the texture and consistency of a traditional liqueur, you can add a small amount of Xanthan gum. When adding, be sure to sprinkle it lightly over the surface of the mixture in the sauce pan, don’t drop it in as a clump, otherwise it will be difficult to mix it in properly.

After the sweetener is dissolved, let the mixture cool for about 20 minutes, and then add the vodka and vanilla and stir. Good quality vodka like Grey Goose is reccomended; cheap vodka just does not cut it in this recipe. Transfer the liqueur to jars or bottles and store at room temperature in a cabinet or the pantry. Now you can make Keto Cocktails! (This liqueur makes a mean White Russian 😉
